This easy to prepare dish turned up, of all places, at my grandfather's wake 30 years ago. After a good deal of pressuring the cook, the recipe was obtained and has been a family favorite ever since. No major family function goes by without this being on the menu! This can be tossed together in the morning or the night before and then put in the oven at your convenience.
Ingredients:
1/2 lb lean ground beef
1 small onion, chopped
1/2 lb polska kielbasa, sliced thin
2 (15 ounce) cans pork and beans, do not rinse
1 (15 ounce) can red kidney beans, rinsed and drained
1 (15 ounce) can butter beans, rinsed and drained
3/4 cup granulated sugar
3/4 cup brown sugar, firmly packed
1 1/2 cups ketchup
2 tablespoons vinegar
1/2 teaspoon salt
1/4 teaspoon ground black pepper
Directions:
1. In heavy 4 quart dutch oven, brown the lean ground beef.
2. Add the chopped onion and cook until onion starts to become transparent.
3. At this point, if you wish, you can strain any fat from the pan and return the beef and onion mixture to the dutch oven.
4. Add the sliced kielbasa and all beans to the pan.
5. In medium bowl, combine the sugar, brown sugar, ketchup, vinegar, salt and pepper. Stir until well combined and add all to the meat and beans. Mix well and place the pan in 350°F oven and bake, uncovered, for 45 minutes to an hour, or until good, hot and bubbling, stirring occasionally. Remove from oven and let cool ten minutes before serving.
6. Alternately, this can be prepared and then cooked in a slow cooker instead of a conventional oven for those on-the-go pot luck dinners.
