Works with bone in or boneless chicken (i like boneless, more flavor is retained). Ingredients:
6 boneless skinless chicken breasts |
14 ounces light coconut milk |
2 tablespoons red curry paste |
2 tablespoons fish sauce (nam plah) |
6 garlic cloves, chopped |
1/3 cup cilantro, chopped with stems |
2 1/2 teaspoons splenda brown sugar blend |
1/2 teaspoon white pepper |
Directions:
1. Mix all ingredients. Marinate chicken overnight, or at least 3 hours. 2. Grill. |
