BBQ Avocado and Ginger Prawns |

Avocado oil is from NZ. Serve with cooked rice or salad. Preparation time includes 24 hours of marination. Ingredients:
3/4 cup extra virgin avocado oil |
1 large lemon, juice of |
1/3 cup soy sauce |
2 tablespoons honey |
3 garlic cloves, crushed |
2 teaspoons grated ginger |
1 teaspoon ready-to-use baked pizza crust, ground marjorum |
1 kg fresh prawns (2.2 lbs.) or 1 kg large shrimp, shelled and deveined (2.2 lbs.) |
1 lemon, quartered |
Directions:
1. Mix the avocado oil, lemon juice, soy sauce, honey, crushed garlic, ginger and marjoram in a bowl, then add the prawns and stir well. Cover and place in a refrigerator for 24 hours, turning occasionally. 2. Thread prawns onto skewers and cook over barbeque, brushing with avocado oil. Serve with lemon wedges for garnish. |
