Goes well with Pork, Chicken, Beef, Seafood..rolls, mashed potatoes, Rice and Gravey. Ingredients:
1 lb. bacon |
1/2 cup bacon drippings |
35 oz corn, can, drained |
1 lg onion, chopped |
2 md garlic cloves, minced |
1 lg green pepper, chopped |
2 md tomatoes, peeled,chopped |
1 tsp salt |
1/2 tsp black pepper |
1 tbsp sugar |
1/2 tsp cayenne pepper |
1 cup chicken broth, canned |
1 cup milk |
Directions:
1. Fry Bacon , Place Bacon on a Paper towel 2. Keeping the bacon drippings 3. In a heavy 12-inch skillet over medium heat. 4. Add corn, onion,garlic, and bell pepper; cook until onion is thoroughly wilted and transparent, 5. about 10 mins. 6. Stir often to prevent sticking. 7. Add tomatoes, salt, black pepper,sugar and cayenne; 8. stir until combined. 9. Add broth little a time to prevent sticking you might not use all of it.. 10. Reduce heat. Barely simmer, stirring often, until liquid has almost evaporated, about 30mins. 11. The mixture will be thick and mushy. Stir in milk; cook until reduced by 1/2. 12. Increase heat slightly. Cook just 3 or 4 minutes. serve hot . 13. Makes 4 to 6 servings |
