Bayou Broccoli Soupcajun Style

A Cajun's way of eating his/her broccoli! Ok, I added my green onions like a good southern girl! A cajun friend reminded me of this!lol
Ingredients:
1 stick butter
1 tablespoon garlic, minced
1 small onion, chopped fine
1 small green bell pepper, chopped fine
1 cup finely chopped celery
1 pound crawfish tails
4 cups chopped fresh broccoli
8 oz. cream cheese, softened
6 cups seafood or chicken stock
2 cups half and half
1 tablespoon creole spice
1 teaspoon onion powder
8 oz. shredded cheddar cheese
4 oz. shredded pepper jack cheese
1 cup sour cream
1/2 cup of sliced green onions(white and green parts)
Directions:
1. In a large pot over high heat, combine the chicken or seafood stock and the broccoli.
2. Cover and cook about 3 to 5 minutes, or until tender and set aside.
3. In a large skillet, cook the onions, garlic, bell pepper, and celery in the butter for about 3 to 4 minutes or until lightly browned.
4. Add the crawfish and Creole seasoning and continue to cook for 3 to 4 minutes.
5. Add to the broccoli and broth.
6. Stir in the half and half, spices, sour cream, cream cheese and cheese.
7. Cook over medium heat, stirring often for 3 to 4 minutes.
8. Mix the cornstarch and cold water and stir into the soup pot.
9. Continue to cook over low/med heat, stirring constantly until mixture thickens slightly, about 4 to 5 minutes.
10. Serve with hot French bread and if desired hot cooked rice!
