A challenge was offered up in our group: The Next Iron Chef style. To create a course to represent each of the 4 regions of the continental US, but with your own style. I chose the North East as my East, specifically the Chesapeake Bay area, for the appetizer. Ingredients:
8oz fresh crab meat |
8oz fontina cheese, softened or shredded(i was able to soften mine enough in the microwave) |
2-3 green onions |
1t fresh lemon juice |
kosher or sea salt and fresh ground black pepper |
1t fresh parsley, chopped |
1t old bay seasoning, divided |
2 packages(24) premade phyllo cups |
Directions:
1. Combine crab meat, cheese, onion, lemon juice, salt and pepper and about 2t of the Old Bay in medium glass bowl. 2. Drop by rounded spoonfuls into pastry cups. 3. Sprinkle with remaining Old Bay 4. Bake for about 12 minutes at 350 until lightly browned and crispy and filling is warmed through. |
