Bavarian Sausage and Barley Stew

Ingredients:
225 g pork sausage, fresh
150 g pearl barley
180 g cabbage, coarsely shredded
128 g sliced carrot
120 g sliced celery
80 g chopped onion
5 g garlic, chopped
1 g bay leaf
1 chicken stock cube
1100 ml water
800 g diced tomatoes
2 tablespoons prepared mustard, optional
1 toasted croutons, for garnish
Directions:
1. Brown sausage in Dutch oven or large heavy saucepan. Drain any excess fat from sausage. Add remaining ingredients, except mustard and croutons.
2. Cover and simmer 1 hour or until barley and vegetables are tender. Stir in mustard, if desired. Remove bay leaf before serving. Pass around croutons for garnish.
