Bavarian Sausage and Barley Stew |

stew Ingredients:
225 g pork sausage, fresh |
150 g pearl barley |
180 g cabbage, coarsely shredded |
128 g sliced carrot |
120 g sliced celery |
80 g chopped onion |
5 g garlic, chopped |
1 g bay leaf |
1 chicken stock cube |
1100 ml water |
800 g diced tomatoes |
2 tablespoons prepared mustard, optional |
1 toasted croutons, for garnish |
Directions:
1. Brown sausage in Dutch oven or large heavy saucepan. Drain any excess fat from sausage. Add remaining ingredients, except mustard and croutons. 2. Cover and simmer 1 hour or until barley and vegetables are tender. Stir in mustard, if desired. Remove bay leaf before serving. Pass around croutons for garnish. |
