BAVARIAN POTATO SALAD This recipe came from an estate sale. I obtained it when I purchased the family collection from the Dubach Estate in Combine, Texas in 1984. Ingredients:
4 cups potatoes |
1/2 teaspoon salt |
1/3 cup red onion chopped |
2 tablespoons lemon juice |
2 cups chicken broth |
1/4 cup vegetable oil |
1/2 teaspoon sugar |
1 teaspoon freshly ground black pepper |
Directions:
1. Peel and slice potatoes 1/4 thick. 2. Boil potatoes in broth with 1/4 teaspoon salt for 8 minutes. 3. Drain well them toss warm potatoes with vegetable oil and onions. 4. Dissolve remaining salt and sugar in lemon juice then pour over potatoes. 5. Marinate salad 2 hours before serving. 6. Serve at room temperature. |
