Great little sandwich here. I serve these at showers and they are very popular. Enjoy Ingredients:
8 hard boiled eggs |
1/3 cup chopped pickles |
2 tablespoons low fat yogurt |
2 tablespoons dijon mustard |
2 tablespoons finely chopped white onion |
1 tablespoon mayonnaise |
8 slices pumpernickel bread |
8 slices dill pickle |
Directions:
1. Chop hard cooked eggs then combine with chopped pickles. 2. Combine yogurt, mustard, onion and mayonnaise then mix into eggs. 3. Spread one quarter of the mixture on four slices of bread. 4. Top with remaining four slices of bread and garnish with a slice of dill pickle. |
