Batter-Fried Scallions

Ingredients:
1 cup white wine
1 cup flour
salt
fresh ground black pepper
crushed red pepper flakes
40 scallions (4 bunches)
vegetable oil
Directions:
1. Whisk wine into flour in a bowl until smooth.
2. Season with salt, black & red pepper.
3. Halve scallions crosswise.
4. Dip into batter, and fry in hot vegetable oil in a skillet over medium heat until crisp, 2–3 minutes.
5. Drain on paper towels, and salt generously.
