Saveur Magazine. For this recipe, it is best to use thin scallions. Ingredients:
1 cup white wine |
1 cup flour |
salt |
fresh ground black pepper |
crushed red pepper flakes |
40 scallions (4 bunches) |
vegetable oil |
Directions:
1. Whisk wine into flour in a bowl until smooth. 2. Season with salt, black & red pepper. 3. Halve scallions crosswise. 4. Dip into batter, and fry in hot vegetable oil in a skillet over medium heat until crisp, 2–3 minutes. 5. Drain on paper towels, and salt generously. |
