Ingredients:
1 cup all-purpose flour |
1 teaspoon baking powder |
1 teaspoon salt |
1/4 teaspoon pepper |
1 egg, beaten |
3/4 cup milk |
1 (3 1/2- to 4-pound) broiler-flyer, cut up |
vegetable oil |
Directions:
1. Combine first 6 ingredients; mix well. Dip chicken pieces into batter. 2. Heat 1 inch of oil in a large skillet to 375°; add chicken, and brown quickly on all sides. Reduce heat; cover, and fry 25 minutes or until chicken is tender and golden brown, turning occasionally. Drain well on paper towels. |
