We love fried eggplant and this batter is perfect for it. I think it was originally for shrimp. The original directions said you could cook the food ahead of time and reheat in the oven. I tried it ONCE and it did not work. It tasted like warmed over food. Ingredients:
1 cup flour |
2 tablespoons cornstarch |
1/2 teaspoon baking powder |
1 tablespoon salt |
2/3 cup water |
seasoning salt |
Directions:
1. Mix the dried ingredients together. 2. Add the water. 3. Mix well. 4. Coat the food with batter and deep fry. 5. Drain on paper towels. 6. Sprinkle with seasoned salt. |
