An old recipe from the Southern chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947. Ingredients:
3 eggs |
1 cup buttermilk |
1 cup milk |
1/3 cup cornmeal |
2 teaspoons baking powder |
1/4 teaspoon baking soda |
1/2 teaspoon salt |
2 tablespoons butter, melted |
Directions:
1. Preheat oven to 400F and set baking 8 square baking pan in the oven to heat. 2. Beat eggs; add buttermilk, and milk. 3. Beat well. 4. Sift dry ingredients together; add to milk mixture along with the butter. 5. Grease the heated pan, pour in batter and bake until set in center, about an hour. 6. Serve at once. |
