These are very tasty and a nice addition to grilled steaks or burgers. Enjoy Ingredients:
2 tablespoons olive oil |
1 medium white onion chopped |
2 cloves garlic crushed |
1 bell pepper seeded and chopped |
1/2 cup chopped parsley |
1 cup chicken stock |
1/2 teaspoon salt |
1 teaspoon freshly ground black pepper |
6 medium potatoes thinly sliced |
Directions:
1. Heat oil in a large skillet over moderate heat and sauté onion, garlic and bell pepper 5 minutes. 2. Add parsley and broth then season with salt and pepper. 3. Bring to a boil and remove from heat. 4. Layer sliced potatoes in broth in the skillet then bring to a boil over moderate heat. 5. Reduce heat and simmer covered for 20 minutes. 6. Pour a little of the cooking liquid over the potatoes when serving. |
