Easy fish stew in less than an hour. Use frozen fillets if you like. Ingredients:
16 oz firm fish fillets, such as tuna or mahi-mahi |
( i used frozen mahi i bought on sale) cut into bite sized chunks.(skin fish if needed) salt & pepper, cover and set aside. |
1 can diced tomatoes on juice, or 3 large romas, seeded and diced. |
1 red onion, sliced thinly |
3-4 garlic cloves, sliced thinly |
1/2 red bell pepper, seeded and diced |
3-4 red potatoes, cut into 1 1/2 inch pieces |
1 1/2 tbsp olive oil |
1 bay leaf |
1/2 tbsp paprika |
2 tbsps capers, rinsed |
1/2 cup white wine |
fresh chopped parsley for garnish |
Directions:
1. Heat a large sauce pan to medium heat. 2. Add olive oil. 3. Saute the onion and garlic until soft. 4. Add everything else EXCEPT fish to the pan. 5. Add water if needed to cover the vegetables. 6. Bring to a boil then simmer , covered for 25 minutes. 7. Add fish and cook for 4 more minutes 8. Sprinkle with parsley. 9. Serve immediately with some crusty bread.. |
