Basmati Rice with Mustard Seeds and Golden Raisins |

Ingredients:
2 2/3 cups water |
1 1/3 cups texmati rice* (american basmati) or brown basmati rice |
1/4 cup golden raisins |
1 cinnamon stick |
1 teaspoon mustard seeds |
3/4 teaspoon salt |
1/2 cup thinly sliced scallion greens |
Directions:
1. In a 3-quart heavy saucepan stir together all ingredients except scallion and bring to a boil. Reduce heat to low and cook, covered, until rice is tender and liquid is absorbed, about 20 minutes. Fluff rice with a fork and stir in scallion. |
