Basmati Rice With Dried Fruits And Nuts

A beautifully fruity dish that fills the house with a wonderful aroma. Brings rice to life. Dried apples, cherries and golden raisins can be used instead of the fruits listed. Almonds, pine nuts, walnuts, cashews or pistachios can replace the pecans. Read more . Taken from, William's Sonoma Beans and Rice.
Ingredients:
1/4 c unsalted butter
1 small yellow onion, minced
1 1/2 c basmati rice
3 1/4 c water
3/4 tsp. salt
freshly ground pepper
1/4 tsp. ground cinnamon
1/4 tsp. fround allspice
1/4 c raisins
1/4 c dried cranberries
1/2 c dried apricot halves, coarsely chopped
1/2 c pecans, toasted and coarsley chopped
Directions:
1. In a saucepan over medium heat, melt the butter.
2. Add the onion and saute, stirring, until soft, about 10 minutes.
3. Meanwhile, rinse the rice well and drain. When the onion is ready, add the rice, water, salt, pepper to taste, cinnamon, allspice, raisins, cranberries and apricots to the saucepan.
4. Bring to a boil, reduce the heat to low, cover and cook, without stirring, for 20 minutes; do not remove the cover.
5. After 20 minutes, uncover and check to see if the rice is tender and water is absorbed. If not, re-cover and cook for a few minutes longer until the rice is done.
6. Add the pecans and toss to combine.
7. Transfer to a warmed dish and serve immediately.
