3 medium tomatoes |
3 garlic cloves, minced |
1 celery rib, minced |
2 tablespoons grated parmesan cheese |
1 tablespoon pesto sauce |
1/2 teaspoon salt |
1/8 teaspoon pepper |
Directions:
1. Seed and chop tomatoes. 2. In a medium microwave safe b owl, combine tomatoes, garlic, and celery. Microwave on high for 4 minutes, stirring 2 or 3 times. 3. Stir Parmesan cheese, pesto, salt and pepper into tomato mixture. Let cool. 4. Spoon filling into tartlets. Serve at room temperature. |
