This is a recipe from Ming Tsai, and is very quick and easy to make on a small budget.
Ingredients:
1 large diced red onion
1 tablespoon minced ginger
1 tablespoon brown sugar
4 cups diced whole roma tomatoes
5 cups chicken stock
1 cup picked basil leaves
salt and black pepper
Directions:
1. In a large saucepan and a little oil, caramelize the onions, ginger, and sugar.
2. Add the tomatoes and bring to a simmer.
3. Season with salt and pepper.
4. Add the basil and puree.
5. Check the seasoning.
