Basil-Tomato Chicken Skillet |

Wonderful, yet simple dish. Great for an impressive weeknight dinner. Ingredients:
nonstick cooking spray |
1 -1 1/4 lb boneless skinless chicken breast half |
1/8 teaspoon salt |
1/8 teaspoon ground black pepper |
1 (14 1/2 ounce) can no-salt-added diced tomatoes, drained |
1/4 cup fresh basil, snipped |
9 -10 ounces spinach, pre-washed |
2 tablespoons parmesan cheese, finely shredded |
Directions:
1. Cut chicken breasts into strips. 2. Coat an unheated 12-inch skillet with nonstick cooking spray. 3. Cook and stir chicken in hot skillet until done. 4. Sprinkle with salt and pepper. 5. Add tomatoes and basil; heat through. 6. Remove from heat. 7. Add spinach; toss until wilted. 8. Divide among 4 plates. 9. Sprinkle with cheese. |
