Ingredients:
basil pesto pasta |
1 tablespoon olive oil |
2 small zucchini, thinly sliced |
1/2 teaspoon kosher salt |
1/8 teaspoon black pepper |
1/4 cup fresh mint leaves, torn |
Directions:
1. Heat the oil in a skillet over medium heat. Add the zucchini, salt, and pepper. Cook, stirring occasionally, until tender, 4 to 5 minutes. Stir in the mint leaves. Spoon over the pasta with basil pesto. |
