Basil Bean and Veggie Soup |

Pinto or navy beans and a variety of veggies! Dump and SLOW COOKER IT! Ingredients:
1 pound pinto beans |
1 zucchini, diced |
2 medium turnips, peeled and diced |
1 large potato, peeled and diced |
2 stalks celery, sliced |
2 medium onions, chopped |
28 oz can tomatoes, stewed |
2 teaspoons basil |
1/8 teaspoon crushed red pepper |
1 tablespoon salt |
2 tablespoons olive oil |
Directions:
1. Cut, peel, dice, and toss into crock pot (after pre-soaking beans). High for 5-6 hrs or low for 7-8. |
