Basic Whipped Sweet Potatoes |

From my collection of handwritten recipes. Ingredients:
2 lbs fresh sweet potatoes (yams) |
1/2 cup butter |
1/3 cup hot milk |
4 tablespoons sugar |
1 1/4 teaspoons allspice |
Directions:
1. In a medium saucepan, cook sweet potatoes in boiling water to cover until tender, 25-30 minutes. Drain, peel off skins. Place potatoes in a bowl. Mash with potato masher or electric mixer until smooth. Add butter, milk, sugar, and allspice; mix until fluffy and blended. Serve at once. Or, place in a buttered 1 quart casserole. Cover and bake in a preheated oven at 350* until hot, 20-30 minutes. |
