Here's my basic vinaigrette recipe; I use this on all sorts of salads and veggies. It keeps well for about 3-4 days in the refrigerator, though the flavors will mellow in that time. Use the best ingredients you can find-it will make a difference! Read more ! Ingredients:
1 clove garlic, smashed |
1 tsp. strong dijon mustard |
1 tbs. white wine vinegar |
salt and peppar |
extra-virgin olive oil, 3-4 tbs. |
Directions:
1. Mix together the mustard and vinegar with the clove of garlic in a bowl or a jar with a tight-fitting lid. Leave them to mingle about 10-15 minutes. 2. If using a bowl, slowly add olive oil, whisking, until the consistency is how you like it. If using a jar, start with about 2-3 tbs. oil, place the lid on tightly, and shake like crazy till it's as thick as you like. 3. Remove the clove. Season with salt and pepper. That's it! |
