A simple dressing for any salad. It will enhance your ingredients, not overpower them. Dressing will keep for several days in the refrigerator. Ingredients:
1/2 cup extra virgin olive oil |
3 tablespoons red wine vinegar (or more) or 3 tablespoons white wine vinegar (or more) |
salt & freshly ground black pepper |
1 large shallot, rough chopped |
Directions:
1. Combine oil, vinegar and salt and pepper in a blender and blend about 30 seconds until emulified. 2. Taste and add more vinegar, by teaspoons, if desired. 3. Add shallot and pulse until shallot is minced. |
