Basic Vegetable Broth (Slow Cooker)

A nice easy way to make a vegetable broth. This freezes well and is a nice base for many soup recipes.
Ingredients:
2 carrots, chopped
2 celery ribs, chopped
2 onions, unpeeled, chopped
1 large tomato, chopped
3 garlic cloves, halved
1/2 cup mixed mushrooms, chopped
1/4 teaspoon salt
1/4 teaspoon peppercorn
2 bay leaves
Directions:
1. Place all ingredients in slow cooker with 7 cups water.
2. Cook on low heat until vegetables are tender, about 6 hours.
3. Strain into large bowl, pressing vegetables to extract liquid.
4. Let cool 30 minutes.
5. Refrigerate uncovered until cool.
6. Cover and refrigerate for up to 3 days or freeze for up to 1 month.
