Instead of 2 (9-ounce) packages of tortellini, you can use a (20-ounce) family-size package with only a slight increase in yield. Ingredients:
4 cups fat-free, less-sodium chicken broth |
2 cups water |
1/2 cup dry white wine |
1/4 cup fresh lemon juice (2 lemons) |
1/2 teaspoon freshly ground black pepper |
2 (9-ounce) packages 3-cheese tortellini (such as di giorno) |
crumbled feta cheese (optional) |
plain fat-free yogurt (optional) |
Directions:
1. Combine first 5 ingredients in a Dutch oven; bring to a boil. Add tortellini; cook, uncovered, 8 minutes. If desired, top with feta cheese or yogurt. |
