A basic shrimp stock useable in many other dishes Ingredients:
6 cups water |
1 teaspoon olive oil |
1 lb shrimp shells and/or heads |
1/4 teaspoon salt |
1/4 teaspoon whole black peppercorns |
1 dried bay leaf |
1 tablespoon parsley |
3 tablespoons onion; chopped |
Directions:
1. Place the head and/or shells in the water; add the other ingredients. Bring to a boil, reduce heat and simmer for 20 to 30 minutes. 2. The oil should help prevent excessive foaming and boiling-over; but watch carefully. Strain stock into covered containers and refrigerate until needed. Discard heads and/or shells. 3. Use in soups and sauces that call for shrimp stock. |
