A tasty cold orzo pasta salad. It's very basic and easy to alter: add tomatoes, zucchini, bell peppers, black beans, corn, capers, olives, pine nuts, shrimp, whatever! Ingredients:
3 cups cooked orzo pasta (equals about 1 cup uncooked) |
1 cup frozen green pea, thawed |
3 ounces crumbled feta cheese |
1 cup chopped parsley |
3 tablespoons balsamic vinegar |
2 tablespoons extra virgin olive oil |
1 teaspoon salt |
1 teaspoon black pepper |
1 garlic clove, minced |
Directions:
1. Combine all ingredients in a large bowl, and toss well to coat. Cover bowl and chill for one hour. |
