A basic mushroom broth useable in many other dishes. Ingredients:
4 cups water |
1-1/2 cup mushroom peelings and stems |
1 tablespoon onion; minced |
1/4 teaspoon salt |
1/4 teaspoon fine ground white pepper |
1/4 teaspoon thyme leaves |
Directions:
1. Place the mushroom stems, peelings and onion in the water. 2. Add the salt, pepper and thyme. 3. Bring to a boil, reduce heat to a simmer and cook for 20-30 minutes. 4. Strain or process the broth and refrigerate until needed. |
