This is very simple, absolutely delicious. Another of Mark Bittman's recipes from How to Cook Everything Vegetarian Ingredients:
2 shallots, finely chopped |
3 cloves garlic, minced |
2 tbsp oil |
1/2 cup small diced carrots |
1/2 cup finely chopped celery |
1 14 oz can tomatoes |
1 cup brown lentils |
6 cups vegetable stock |
1 bay leaf |
1 tsp basil |
Directions:
1. Heat oil in pot. Add vegetables and cook for 2 minutes. 2. Add all other ingredients. Bring to a boil and then simmer for one hour or until all vegetables are cooked but firm and soup is nice and thick. 3. If desired, puree half the soup. |
