great with veggies, as a mayo substitute on sandwiches, on crackers... Ingredients:
1 (15 ounce) can garbanzo beans, rinsed and drained |
1 garlic clove, minced |
1/4 cup tahini (sesame seed paste) |
1/4 cup lemon juice |
1/4 cup olive oil |
1/2 teaspoon salt |
2 tablespoons pine nuts, toasted (optional) |
1 tablespoon snipped fresh parsley |
Directions:
1. In a blender or food processor combine the garbanzo beans, garlic, tahini, lemon juice, oil, and salt. Cover and blend or process until smooth, scraping sides as necessary. 2. Spoon the hummus onto a serving platter. If desired garnish with pine nuts. Sprinkle with parsley. |
