Basic Homemade Chicken Soup |

Chicken soup with onion, carrots, celery, and kosher salt - it doesn't get any simpler and better than this. Ingredients:
128 oz. water (2 gallon) |
4 lb. chicken, whole |
1 onion, whole |
3 cups celery, chopped |
4 cups carrots, chopped |
2 tbsp. salt |
Directions:
1. Boil chicken and onion (peeled, but left whole) in water (salt added) until chicken is completely cooked and meat in falling off the bone. 2. Remove chicken and onion from water. 3. Add chopped vegetables. 4. Simmer until vegetables are tender. 5. Turn off heat. 6. Bone and skin the chicken. 7. Chop or shred chicken meat into bitesize pieces. 8. Add to hot soup and serve. |
