Quinoa is a complete protein grain (50% more than wheat), high in lysine, more iron, phosphorus, vitamins A, E and B, and more calcium and fat than other grains. It must be rinsed well before cooking. Makes about 1 cup cooked. Ingredients:
1/4 cup quinoa |
3/4 cup water |
Directions:
1. Rinse quinoa in a fine strainer until water runs clear (not soapy-looking). 2. Bring water to a boil, add salt to taste. 3. Add grain, reduce heat to medium-low. 4. Cover and cook 20 minutes. 5. Let stand off the heat, covered, for 10 minutes. |
