BASIC FLOUR TORTILLA This recipe came from an estate sale. I obtained it when I purchased the family collection from the Lynch Estate in Garland, Texas in 1994. Ingredients:
4 cups all purpose flour |
1 teaspoon baking soda |
1/2 teaspoon salt |
1/4 cup canola oil |
1-1/2 cups warm water |
Directions:
1. In a large mixing bowl combine all ingredients and 1/2 of the water. 2. Mix together with hands and continue adding water until dough forms a solid but not sticky ball. 3. If necessary add additional flour or water as needed. 4. Knead dough on a floured board for 5 minutes. 5. Cut dough in half and then in half again continuing the process until you have 8 equal portions. 6. Roll each piece into a ball then place on a lightly floured surface and cover with a damp towel. 7. Heat griddle or cast iron pan to medium heat. 8. Roll out dough one piece at a time to 1/4 thickness. 9. Place one round of dough on griddle and cook each side for 30 minutes. 10. Continue the process with the remaining 7 portions of dough. 11. The cooked tortillas will keep for two weeks in the refrigerator or up to six months in the freezer. |
