Can substitute any fish. Serve with Mango & Black Bean Salsa or Cole Slaw w/ Chipotle dressing. Ingredients:
1 lbs red snapper |
2 t smart balance, warmed |
2 t garlic powder |
2 t ground cumin |
2 t lemon juice |
8 corn tortillas |
Directions:
1. Preheat oven to 400. 2. Rinse fish and pat dry. 3. Arrange fish in glass baking dish. 4. Mix butter with garlic powder, juice and cumin. Brush over fish. 5. Place in oven for about 8-10 minutes or until fish flakes easily with fork. 6. Warm tortillas in foil in the oven or heat them over a burner. |
