This is a classic that all of your friends and family will be begging you to make over and over again. Ingredients:
3/4 cup cornmeal |
1 cup milk |
1/2 cup wholewheat flour |
1/2 cup all-purpose flour |
4 tsp baking powder |
1/4 cup sugar |
1 egg |
1/3 cup oil |
Directions:
1. Preheat the oven to 400F and lightly grease a muffin pan. 2. Mix the cornmeal and milk in a small bowl so the cornmeal can soak while preparing the rest of the ingredients. 3. In a large bowl mix together the flours, baking powder and sugar. 4. Mix the egg and oil together well and stir into the cornmeal. 5. Add the cornmeal to the flour and stir to moisten. 6. Pour into the prepared pan and bake for 12 minutes or until a toothpick comes out clean from the center of the muffin. |
