Basic Cheese Sauce

I was desperate to find a way to get my DH to eat broccoli and cauliflower. I found that he would eat it with cheese sauce on top. Now that he's accustomed to eating those veggies, I don't have to resort to cheese sauce any more, unless we're in the mood for it.
Ingredients:
2 tablespoons butter
2 tablespoons flour
1/4-1/2 teaspoon salt
1 dash black pepper
1 dash paprika
1 cup milk or 1 cup half-and-half
1 cup shredded cheddar cheese
1/4 teaspoon dry mustard
Directions:
1. In a saucepan over low heat, melt butter. Stir in flour, salt, pepper, and paprika until blended. Gradually add milk; stirring constantly until sauce thickens. Add cheese and mustard and continue cooking until cheese melts.
