Basic Butterscotch Cookies |

This is a no-frills kind of cookie recipe that I have had for years. I am unsure where it originated. I do sometimes add in 1/2 cup chopped nuts or 1/2 cup baking chips to change it up a bit, but they are good on their own. NOTE: The original recipe called for 1/2 cup butter & 1/2 cup shortening, but I now use I cup butter (or margarine). Ingredients:
1 cup butter (or margarine) |
2 cups brown sugar |
3 eggs, beaten |
2 teaspoons vanilla |
3 cups flour |
1 teaspoon baking soda |
1 teaspoon baking powder |
1/2 teaspoon salt |
Directions:
1. Preheat oven to 350*. Cream the butter and brown sugar. 2. Add in the eggs and vanilla. 3. Mix together the dry ingredients (flour, baking soda, baking powder & salt) and combine with the creamed mixture. Mix well. 4. Stir in nuts or baking chips if you are using. 5. Drop by teaspoons on a cookie sheet. ( I personally prefer to chill my dough-for easier handling & roll teaspoons into balls, flattening slightly with a glass dipped in sugar). 6. Bake 350* for 8-10 minutes. |
