My husband was skeptical the first time I prepared this salad for him, admits Carol Stevens of Basye, Virginia. But he loved it! It's zippy and refreshing served with a rich entree or hot barbecue. Ingredients:
1 cup sliced radishes |
1/4 cup cubed swiss cheese |
1 green onion, sliced |
1-1/2 teaspoons tarragon vinegar |
1/4 teaspoon minced garlic |
1/4 teaspoon dijon mustard |
1/8 teaspoon salt |
dash pepper |
4 teaspoons olive oil |
leaf lettuce, optional |
Directions:
1. In a bowl, combine the radishes, cheese and onion. In a small bowl, combine the vinegar, garlic, mustard, salt and pepper; whisk in oil until smooth. Pour over radish mixture and toss to coat. Chill until serving. Serve on a bed of lettuce if desired. Yield: 2 servings. |
