A base sauce I use several ways in many of my recipes. Ingredients:
1 ripe mango |
1 roma tomato diced with juices. |
1 red jalapeno seeded and chopped. |
1 tbs chopped red onion |
2 cloves garlic shredded. |
2 tbs raisins |
1/4 cup of extra virgin olive oil |
2 tbs balsamic vinegar |
1 cup water. |
Directions:
1. In a large saucepan add olive oil and on a medium heat bring up oil temp( around 1 minute) 2. Add the onion, jalapeno and saute for 5 minutes. 3. Add garlic and saute for 1 minute. 4. Add raisins,tomato,mango and saute and stir frequently for 3 minutes. 5. Add water and continue cooking until water is almost gone. 6. Add balsamic and cook another 2 minutes. 7. Puree and place in a plastic container and refridgerate. |
