From my collection of handwritten recipes 1960's. Ingredients:
6 green peppers, cut in half, seeds removed |
1/4 cup margarine |
3/4 cup chopped onion |
1 1/2 lbs ground beef |
1 teaspoon salt |
1 dash pepper |
4 teaspoons chili powder |
1/3 cup flour |
1 (1 2/3 cup) can evaporated milk |
3/4 cup catsup |
parmesan cheese |
Directions:
1. Cut 6 green peppers in half; remove seeds and parboil in boiling water 5 minutes; drain. Melt 1/4 cup margarine in large frying pan over low heat. Add 3/4 cup, or more to taste, chopped onion and cook until tender. Add 1 1/2 lbs. hamburger, 1 teaspoons salt, dash of pepper, and 4 teaspoons chili powder. Break up beef and cook over medium heat until meat is well browned. Remove from heat and add 1/3 cup flour. Gradually stir in 1 large can milk (1 2/3 cups) and return to low heat. Cook until thick, stirring occzsionally. Stir in 3/4 cup catsup and blend well. Arrange peppers in greased baking dish and fill with meat mixture. Sprinkle top with parmesan cheese, cover with foil and bake in 350* oven 30 minutes. Remove foil and bake 15 minutes more. |
