Originally from Naturally Slim and Powerful -one of two favorites that I'm saving before putting the book in the garage sale box. It's a nice hot comfort food that I would eat for dinner on its own. Could easily add some cheese or boca for some protein if you wanted to make it more of a main dish. Ingredients:
2 tablespoons oil |
4 -5 garlic cloves, minced |
1 cup fresh parsley, chopped |
1 cup mushroom, sliced |
3 tablespoons dry white wine |
1 cup barley |
2 cups vegetable broth |
Directions:
1. heat oil in saucepan. 2. add garlic and parsley; saute until garlic is fragrant and parsley is wilted. 3. add the mushrooms; cook and stir until they darken (about 3 minutes). 4. add wine and barley; cook and stir another 3 minutes. 5. add broth, bring to a boil then lower to medium heat. 6. cover and simmer 40 minutes. 7. remove from heat and let stand, uncovered, for 10 minutes before serving. |
