Hearty and rich on a cold day! Ingredients:
1 lb beef stew meat |
1/3 cup diced onion |
1 clove garlic, minced |
1 (10 ounce) can beef broth |
1 cup water |
1/2 cup pearl barley |
2 tablespoons ketchup |
1 teaspoon paprika |
1 teaspoon salt |
1 dash pepper |
2 cups fresh mushrooms, sliced |
1/2 cup sour cream |
Directions:
1. Brown meat, onion and garlic in 2T. 2. olive oil in a 3-4qt. 3. saucepan. 4. Stir in remaining ingredients EXCEPT mushrooms and sour cream. 5. Bring mixture to a boil. 6. Cover; cook over low heat for about 1 hour and 15 minutes. 7. Add mushrooms; continue cooking 15 more minutes. 8. Remove from heat and stir in sour cream. 9. Serve over hot cooked noodles or rice. 10. CROCK POT VARIATION: Reduce water to 1/2cup. 11. Combine all ingredients except mushrooms and sour cream and place in crock pot. 12. Cover; cook on low heat 7-8 hours. 13. Stir in mushrooms; cover, cook on high heat for 15 minutes. 14. Turn off heat and stir in sour cream. |
