Ingredients:
6 cup(s) vegetable broth |
1/2 cup(s) pearled barley |
2 carrots peeled and chopped |
2 stalk(s) celery chopped |
2 small potatoes chopped |
1/2 medium onion, minced |
2 clove(s) fresh garlic minced |
1 teaspoon(s) salt |
1/4 teaspoon(s) pepper |
1/3 cup(s) fresh parsley |
Directions:
1. Heat the broth in a stock pot over medium heat. Add the barley, carrots, celery, potatoes, onion, garlic, salt, pepper and parsley. Bring all to a boil. Reduce the heat to a simmer and cook for 30 0 40 minutes, until the barley is soft. |
