Barley Salad W Grilled Vegetables And Feta |

this is enough for 4 sides or two main courses. Add grilled meat or chicken to make it an entree. Ingredients:
1 cup cooked barley |
roughly chopped grilled vegetables-see below |
1/2 small onion |
1 zucchini |
1/2 eggplant |
1 tbsp freshly chopped parsley |
crumbled feta- to taste |
freshly cracked black pepper |
1 lemon |
Directions:
1. Combine barley and vegetables in a medium sized bowl 2. Sprinkle with parsley, pepper, lemon juice and about 2 TBSP of feta. 3. Toss gently but well. 4. Top with additional feta and serve. |
