This simple salad is so good and keeps well. Ingredients:
1 1/2 cups medium barley |
1/3 cup minced fresh parsley |
1/4 cups chopped green onion |
1/4 cup fresh lemon juice |
1/2 cup vegetable oil |
Directions:
1. Boil barley in 2 quarts salted boiling water for 15 minutes, or until barley tender. Drain in a colander. Set colander over a saucepan of simmering water, steam barley covered with a towel and a lid, for 10 minutes, or until fluffy and dry. Transfer barley to a serving bowl and let cool for 20 minutes. Stir in the parsley and green onions. 2. In a bowl, beat the lemon juice and the oil with salt and pepper to taste and toss the salad with the dressing while the barley is still warm. 3. Chill the salad for at least 1 hour or overnight. |
