sauteed barley Ingredients:
3/4 cup pearl barley |
1/4 cup onion, chopped |
2 cups mushrooms, sliced |
2 1/2 cups chicken broth |
1 tbsp olive oil |
3 cloves garlic, minced |
Directions:
1. warm broth, set aside 2. toast barley, set aside 3. saute onions, mushrooms and garlic til tender 4. add barely and 1/2 cup of broth, sautee on med/hi til liquid absorbs. 5. add 1/2 broth at a time, add more after liquid is absorbed. (approximately 20 mins) |
