from Laughing Planet Café Ingredients:
1 cup pearl barley |
3 1/4 cups vegetable broth |
1/2 teaspoon salt |
1 bay leaf |
1/4 cup red quinoa |
5 -6 small shiitake mushrooms |
Directions:
1. Wash and slice the mushrooms. Place all the ingredients in a saucepan. Bring the liquid to a boil. Reduce heat and cover. Cook for about 30 minutes or until the water has been absorbed and the barley is tender. 2. You may need to add a little extra water if the barley is not soft. Set aside in a warm place until ready to serve. |
