Ingredients:
2 teaspoons olive oil |
1/2 cup chopped onion |
2 cups fat-free, less-sodium chicken broth |
1 cup uncooked quick-cooking barley |
3 tablespoons sliced almonds, toasted |
3 tablespoons golden raisins |
2 tablespoons chopped fresh flat-leaf parsley |
1/4 teaspoon salt |
1/8 teaspoon pepper |
Directions:
1. Heat oil in a 3-quart saucepan over medium heat. Add onion; cook 5 minutes, stirring occasionally. Add broth; bring to a boil. Add barley; cover, reduce heat, and simmer 15 minutes. Add almonds and remaining ingredients; stir well. Cover and let stand 5 minutes. |
